Revamped textile mill in region signs cookie, taco concepts

CONCORD, N.C. — This Concord adaptive-reuse project is expanding its tenant lineup.

Cara’s Cookie Co. and Taco Street have signed deals at Gibson Mill. That historic textile mill has roughly 45,000 square feet dedicated to food hall-style dining, shopping and entertainment.

Southpaw Investors is behind that project. The investment group has been revamping parts of the property at 325 McGill Ave. NW in Concord since acquiring it in 2004.
