CHARLOTTE, N.C. — Billy Sunday made its Charlotte debut on Monday.
That Chicago-based cocktail bar is known for its classic drinks with a modern twist, creative use of ingredients and extensive library of vintage spirits.
“It’s rooted in craft, but it’s also modern expression too,” says Matthias Merges, chef and restaurateur. “The concept is always evolving.”
His hospitality group, Folkart Management, is behind that concept.
Merges told the Charlotte Business Journal he’s been considering different markets for a long time. Charlotte drew him in with its Southern hospitality, the people and the vision for the Optimist Hall project.
