Local entrepreneurs team up on eatery for Optimist Hall

CHARLOTTE — A new hamburger concept has signed on to the $60 million Optimist Hall project. Harriet’s Hamburgers has snagged a 675-square-foot space in the food hall there.

Construction should start soon with a targeted summer opening.

Papi Queso — a popular food truck and current food hall tenant — has teamed up with creative food-and-beverage company The Plaid Penguin on the venture.

“Our aim is to create our version of America’s favorite sandwich, and we couldn’t think of better partners than our friends who have already perfected our second-favorite sandwich — the grilled cheese,” says Joe Haubenhofer, owner of The Plaid Penguin.
