HUNTERSVILLE — Birkdale Village eatery eeZ Fusion & Sushi closed for a month for a $1 million revamp of operations.
That project took the 15-year-old restaurant down to the studs. The result created a prototype for the brand’s future in design, layout and sales, says Alan Springate, owner.

“We’re in a position that we can grow if we earn it,” he adds.
Sales are up about 25% since the restaurant reopened in late September.
“It’s taken a good-sized leap forward. No telling if that’s just newness or what,” Springate says. “It was a very humbling experience to open your door and have (guests) come back and have them come back excited.”
